Pigging out

This evening I cooked the 50p ham fore knuckle I got from the market on Wed. It was one of the larger ones, weighing in at 3lb. Deducting weight of bone and thickest layer of fat and skin on the outside, I reckon there's still over a pound and a half of meat on it, maybe two pounds. As the previous ham was tasty but salty, I soaked this one for most of the afternoon, changing the water once. It was gently boiled for a little over two and a half hours, in a mix of approx 1/3 orange juice to 2/3 water.

The ham is now almost falling off the bone. It's moist and very, very tasty. Very.

And I have maybe a couple of pounds of it.

For 50p.

I love knuckle bones and it's seems to be the one thing my local butcher doesn't sell. I envy you, you've got my mouth watering I want boiled bacon NOW!
